ENPANADAS DE PEPITA Y ESPINACA | Tortillas stuffed with Pumpkin Seed and Spinach


When the tortillas are stuffed , folded and sealed then it is called as enpanadas. Enpanadas are very popular mexican recipe. They are mostly served as snacks. This particular recipe contains all the healthiness of spinach along with it. It can be both shallow or deep fried.

Ingredients:

  • 10 uncooked tortillas 
  • 11/2 cups pumpkin seed grounded
  • 1 frozen spinach bunch or packet
  • 1 bunch chopped scallions or onions
  • 1 jalapeño chili pepper, chopped 
  • salt and black pepper as per taste 

Method:

  1. Mix the ground pumpkin seeds, scallion, jalapeño chili pepper, spinach, salt and pepper. 
  2. Put a spoon-full of mixture in the middle of a tortilla. 
  3. Fold the tortilla and seal the edges well to make enpanada. 
  4. Cook on a griddle at medium heat and turn constantly until all sides are cooked.
