#5 Pad Thai


Pad Thai comes in 5th position in the rankings of most tastiest food of the world.
Pad Thai is a stir-fry recipe. Though there are various ingredients involved the main ingredient is rice stick flat noodles and tamarind paste which does the real magic. These rice stick noodles can be soaked in hot water untill they are tender. They don't need to be boiled.

Preparation Time: 30 Minutes


INGREDIENTS


  • 4 ounces rice stick noodles
  • 3 tbsp. tamarind paste
  • 1 cup peeled shrimp
  • ½ cup pressed tofu(Optional)
  • 1 small head Napa cabbage, shredded
  • ¼ cup fish sauce (nam pla)
  • 3 tbsp. olive or peanut oil
  • 4 tbsp. honey
  • 2 tbsp rice vinegar
  • red chilly flakes as per taste
  • ¼ cup chopped scallions
  • 1 garlic clove, minced
  • 2 eggs
  • 1 cup moong bean sprouts
  • ½ cup roasted peanuts, chopped
  • ¼ cup chopped fresh cilantro
  • 2 limes, quartered

Method:


  1. Add boiling water in a large bowl and put noodles inside it.Water should be sufficient to cover the noodles.Noodles will start becoming tender gradually. Check for every 4-5 minutes so that it doesn't becomes too soft and sticky. Drain out the water,sprinkle with one tbsp oil to avoid sticking and set aside. 
  2. Put tamarind paste, fish sauce, vinegar and honey in a small saucepan over medium-low heat and bring to a simmer. Stir in red chilly flakes and set aside.
  3. Put remaining 3 tbsp. oil in a large skillet over medium-high heat; when oil is hot and starts steaming, add scallions and garlic and cook for about a minute. 
  4. Heat liitle oil in a pan and pour eggs to it, sprinkle some salt and just when it begins to set, move it to the skillet untill just done. 
  5. Add cabbage and bean sprouts and continue to cook until cabbage begins to become tender and its stems starts wilting, then add shrimp and tofu.
  6. When shrimp begin to turn pink and tofu begins to brown, add noodles to pan along with sauces mix. Toss everything together to coat with tamarind sauce and combine well. 
  7. When noodles are warmed throughly sprinklepeanuts and garnishing with cilantro and lime wedges and serve Hot
