#39 Masala Dosa | How to make masala dosa?



               

Masala dosa or Masale Dose is a very popular South Indian food .It is a variant of Dosa or Plain Dosa.It is made from rice, potato, methi, curry leaves and served with Chutneys and Sambar. Masala Dosa is ranked 39th on the list of  world's best food and its popular across entire India and Many other countries as well.

It is like a crispy and thin pancake stuffed with specific Potato Sabji/Masala.

Batter Preparation Time : 16 Hours
Dosa Preparation Time: 15 Minutes            
Cooking Time: 45 Minutes
No Of Dosa: 15-16 Servings

               

Ingredients:


  • 1/2 Cup(250 Gm) Urad Dal (Split black lentils)
  • 1/2 Tablespoon Fenugreek Seeds(Methi)
  • 2 cups Idli Rice. (A typical small rice,general raw rice can also be used if Idly rice not available)
  • 6 Potatoes: Boiled and mashed
  • 2 Medium Onions sliced into thin pieces
  • Ginger 1/2 inch finely chopped
  • Turmeric Powder(Haldi) 1/2 Teaspoon(small spoon)
  • Black Pepper : Very little. A pinch or 1/8 Teaspoon(small spoon) Fresh Curry Leaves: 10-12
  • 2-3 Green Chilly Finely Chopped
  • Salt and water as needed


Batter Preparation:

This is similar to Batter Preparation in Dosa / Plain Dosa recipe


Potato Stuffing Preparation:


  1. Take a Kadhai or Pan and put some oil(2 tablespoon) and heat,once heated add mustard seeds.When seeds splutters, add hing and thinly sliced onions, chopped green chilli,chopped ginger and curry leaves.  Saute for a 2-3 minutes until onion turns light brown.Add turmeric powder, chopped tomatoes and salt needed.
  2. Add 1/2 cup of hot water, when water starts boiling, add the mashed potatoes.Mix well and cook for few minutes (around 5-6 mins) until everything gets blended well.Potato stuffing for Masala dosa is ready.

Directions:

Preparation steps are similar to Dosa / Plain Dosa

  1. When the Dosa is ready to wipe out in the Griddle/Tawa put Potato Stuffing around 1 Laddleful(Kalchul)(or 100 Gms) over Dosa and fold the Dosa including Potato Stuffing in between
  2. Masala Dosa can also be served along with Sambhar , Coconut Chutney or Tomato Chutney
