Corn soup


Serves: 6

Ingredients:

  • 1 tbsp oil
  • 2 onions peeled and chopped
  • 1 cup green or red pepper/capsicum (seeds removed and sliced)
  • 1 tsp chicken stock powder (stock or broth powders are available in Supermarkets)
  • 2 cups water
  • ½ tsp salt
  • ¼ tsp pepper
  • 2 tins (850g) creamed corn
  • 2 cups peeled diced potatoes
  • 2 cups milk (can be made from powdered milk)


Method:
  1. Heat the oil in a large saucepan.
  2. Add the onion, green pepper, and cook until vegetables are soft.
  3. Add the stock, water, salt and pepper.
  4. Add corn and potatoes and simmer with the lid on for a further 20 minutes or until potatoes are tender.
  5. Carefully add milk and bring to boil.
  6. Serve with bread.
