Serves: 6
Ingredients:
- 1 tbsp oil
- 2 onions peeled and chopped
- 1 cup green or red pepper/capsicum (seeds removed and sliced)
- 1 tsp chicken stock powder (stock or broth powders are available in Supermarkets)
- 2 cups water
- ½ tsp salt
- ¼ tsp pepper
- 2 tins (850g) creamed corn
- 2 cups peeled diced potatoes
- 2 cups milk (can be made from powdered milk)
Method:
- Heat the oil in a large saucepan.
- Add the onion, green pepper, and cook until vegetables are soft.
- Add the stock, water, salt and pepper.
- Add corn and potatoes and simmer with the lid on for a further 20 minutes or until potatoes are tender.
- Carefully add milk and bring to boil.
- Serve with bread.
