Gajar Ka Halwa | Carrot Pudding | How to make gajar ka halwa?


Gajar ka Halwa is a traditional sweet dessert pudding made from finely grated carrot,milk and sugar. It is often served with a garnish of almonds and pistachios.

Preparation Time: 15 Minutes
Cooking Time: 45 Minutes
Serves: 3-4 Servings
         

INGREDIENTS


  • ½ Kg Carrots grated finely
  • 1 Lt milk, preferably full cream milk
  • 8 tbsp sugar ( add more or less as required)
  • 50 Gm  Khoya (Condensed milk): (optional for better taste but more rich in calories)
  • 5-6 cardamom, powdered or crushed
  • 10 unsalted cashews taken as whole or chopped
  • 5 unsalted pistachois - sliced or chopped
  • 10-12 raisins/kismis/dry grapes
  • a pinch of saffron (optional)
  • 3 Tablespoon ghee


DIRECTIONS

  1. Wash, peel and grate the carrots (gajar).
  2. Gajar Ka Halwa / Carrot PuddingMix the  milk and grated carrot together in a pan.
  3. Gajar Ka Halwa / Carrot PuddingCook the mixture on lower flame and let the mixture get densed.
  4. Continue to simmer and cook stirring in between.
  5. After 20 minutes add cardamom powder and stir.
  6. When the mixture gets almost dried(after 30-35 minutes), add the khoya and dry fruits.
  7. Stir and cook further for 2 minutes.

Carrot Pudding / Gajar halwa is ready and it can be served Hot and Warm.
It can also be refrigerated and taste great in cold as well
