Gajar ka Halwa is a traditional sweet dessert pudding made from finely grated carrot,milk and sugar. It is often served with a garnish of almonds and pistachios.
Preparation Time: 15 Minutes
Cooking Time: 45 Minutes
Serves: 3-4 Servings
INGREDIENTS
- ½ Kg Carrots grated finely
- 1 Lt milk, preferably full cream milk
- 8 tbsp sugar ( add more or less as required)
- 50 Gm Khoya (Condensed milk): (optional for better taste but more rich in calories)
- 5-6 cardamom, powdered or crushed
- 10 unsalted cashews taken as whole or chopped
- 5 unsalted pistachois - sliced or chopped
- 10-12 raisins/kismis/dry grapes
- a pinch of saffron (optional)
- 3 Tablespoon ghee
DIRECTIONS
- Wash, peel and grate the carrots (gajar).
- Gajar Ka Halwa / Carrot PuddingMix the milk and grated carrot together in a pan.
- Gajar Ka Halwa / Carrot PuddingCook the mixture on lower flame and let the mixture get densed.
- Continue to simmer and cook stirring in between.
- After 20 minutes add cardamom powder and stir.
- When the mixture gets almost dried(after 30-35 minutes), add the khoya and dry fruits.
- Stir and cook further for 2 minutes.
Carrot Pudding / Gajar halwa is ready and it can be served Hot and Warm.
It can also be refrigerated and taste great in cold as well
