Kaju katli stands out to be one of the best Indian sweets enriched with flavours of cashews .
This is one of the most popular sweets found across India and that finds its place during all festivals and ceremonies.
Ingredients:
- Cashewnuts 500 gms soaked 2 hours in water
- Sugar 300 gms
- Ghee 1 tbsp
- Cardamom 5-6 finely powdered
Method:
- Grind cashews to a fine thick paste with very little water.
- Heat sugar and cashew paste in a pan with thick base.
- Cook on medium heat and keep stirring continuously till a soft lump starts to form.
- Add ghee and cardamom powder and mix well.
- Spread this mix on a greased(with ghee) rolling board.
- Roll lightly with a rolling pin to required thickness. Cut into diamond shaped kaju katlis.
Tip: You can add silver foil before shaping them into diamonds.
