Kaju Katli | Kaju Barfi | How to make Kaju Barfi ?


Kaju katli stands out to be one of the best Indian sweets enriched with flavours of cashews .
This is one of the most popular sweets found across India and that finds its place during all festivals and ceremonies.

Ingredients:


  • Cashewnuts 500 gms soaked 2 hours in water
  • Sugar 300 gms
  • Ghee 1 tbsp
  • Cardamom 5-6 finely powdered

Method:


  1. Grind cashews to a fine thick paste with very little water.
  2. Heat sugar and cashew paste in a pan with thick base. 
  3. Cook on medium heat and keep stirring continuously till a soft lump starts to form.
  4. Add ghee and cardamom powder and mix well.
  5. Spread this mix on a greased(with ghee) rolling board.
  6. Roll lightly with a rolling pin to required thickness. Cut into diamond shaped kaju katlis.


Tip: You can add silver foil before shaping them into diamonds.
