Khaman Dhokla Recipe | How to make Dhokla



Khaman Dhokla or Dhokla is one of the famous Gujrati Snacks from India. It is prepared by steaming Gram Flour and Curd batter.

Preparation Time : 3 hour
Cooking time : 25-30 minutes
Serves : 4

Ingredients:


  • Gram flour (besan) 2 cups
  • 1 Cup beaten Yogurt
  • Mustard seeds 1 teaspoon
  • Green chilli-ginger paste 1 teaspoon
  • Turmeric powder 1/2 teaspoon
  • Refine Oil 2 tablespoons
  • Lemon juice 1 tablespoon
  • Soda bicarbonate 1 teaspoon(baking soda)
  • Green chilly 2-3 and cut into half length wise for garnishing
  • Fresh curry leaves chopped for garnishing
  • Salt and water as required

Method:


  1. Sift besan or gram flour to avoid lumps and take it in a bowl. Add yogurt and approximately one cup of warm water and mix. Add salt and mix again.
  2. Leave it aside to ferment for three to four hours. When gram flour mixture has fermented, add turmeric powder and green chilli-ginger paste. Mix Heat the steamer. Grease a thali.
  3. In a small bowl take lemon juice, soda bicarbonate, one teaspoon of oil and mix. Add it to the batter and whisk briskly. 
  4. Take a plate / thali and grease it with some oil drops.
  5. Pour batter into the greased thali and place it in the steamer.
  6. Cover with the lid and steam for ten minutes. When a little cool, cut into your desired shapes and keep in a serving bowl/plate.
  7. Heat remaining oil in a small pan. Add mustard seeds, green chilly(splited into half) and curry leaves. When the seeds begin to splutter, remove and pour everything over the dhoklas.
  8. Serve hot.

Note : 

Grated coconut and chopped coriander leaves can also be used for garnishing Dhokla.
