Pasta is a traditional and famous Italian cuisine. There are multiple variants of pasta dishes. Typically, pasta is a noodle made from an unleavened dough of a durum wheat flour mixed with water or egg and formed into sheets or various shapes, then cooked in various flavours and served in.
In this Recipe we will show how to prepare basic pasta at home.
Preparation Time : 1 Hour
Cooking Time: 10 Minutes
Serves: 4 Servings
INGREDIENTS
- 2 Cup Maida Flour(Finely coursed white wheat flour) or Durum Wheat Flour
- 3 Eggs
- 2 Tablespoon Olive Oil
- Salt and water as required
DIRECTIONS
- Mix the flours and 1/2 teaspoon salt in a large bowl or vessel.
- Make some space in center of flour and add 3 eggs and 1 tablespoon Olive Oil.
- Start mixing egg and flour gently with a spoon or fork initially till it becomes thick.
- Now knead the dough with hands till a smooth ball of dough is ready.
- Cover the dough with a plastic and keep it aside in room temparature for 30-40 minutes.
Covering prevents the dough to dry out and it can be rolled easily to thin layer.
- Now take out one portion of the dough(1/5Th of entire) by cutting it through knife.
and let other part remained covered with plastic.
- Roll the portion of dough thin and spread it (Just like chapati) but try should be length wise/eliptical.
- Ocasionally dust the dough with little flour to avoid sticking on the surface where its rolled.
- Now keep folding the pasta dough with a distance of 2 Inches(5 Cms) into wide flat roll.
- If you directly roll it it might stick.
- Once complete dough is rolled then cut it into strips from across.
- Carefully loosen the noodles with soft hand and put little flour dust if it feels sticky.(Better to put as default).
The strips will be kind of flat noodles.
- Same process can be repeated with other parts of the dough to get sliced raw pasta ready.
This pasta is ready to be boiled and cooked.
- Put some water in a boiling vessel/kadhai and add a pinch of salt in it.
- Add the pasta and cook it for 4-5 minutes.
And the basic home made pasta is ready.
You can saute Pasta with Tomato Ketch Up , or white cream and garnish with Coriander or Basil leaves.
Note and Tips :
- This basic pasta can be sauted with various ingredients like tomato ketchup , white cream etc to give a wide variety of taste.
- The raw pasta can be dried and keft covered in refrigerator and can be used later. The dried pasta will take littly more time to cook. Aprox 8-10 minutes
