Veg Noodles | Hakka Noodles | How to prepare Veg Hakka Noodles?


There are huge number of noodles lovers across globe.
Veg Noodles is one of the most popular Chinese cuisines which is popular in many parts of the world.
It it prepared by boiling the noodles and stir frying with vegetables. </p>

Preparation Time: 25 Minutes              
Cooking Time: 15 Minutes
Serves: 4

             

INGREDIENTS


  • Vegetable Noodles/ Hakka Noodles - 200 grams
  • Onion Medium- 2
  • French Beans 7-8 Whole pieces
  • Cabage - 1/4Th of a medium size cabbage sliced
  • Carrot - 1
  • Capsicum - 1 (small sized or half of big size)
  • 1 bunch of Spring onions
  • Garlic - 4-5 cloves
  • Soya Sauce - 1 Tablespoon
  • Pepper powder - 1 teaspoon
  • Oil - 3 tablespoons (Olive oil / refine oil)
  • Salt - As required


PREPARATION:

Cutting vegetables:
Cut Onions into small pieces and keep it separate.
Cut French Beans , capsicum, carrot into thin lengthy strips and mix all three and keep in a big bowl.
You can use slicer to slice cabbage and then mix it with other vegetables in the bowl.
Chop spring onions and keep it separately.
Peel and chop the garlic cloves.</p>

DIRECTIONS:

  1. Boiling Noodles. Take a pan/wok and put approx 500 ml water into it and start boiling on med-high flame. Put 1/2 Teaspoon salt and 1 teaspoon oil.After 2 minutes add noodles to the water. Cook the noodles for another 2-3 minutes till it gets 70-80% cooked.Do not wait/continue cooking till noodles become too soft.
  2. Switch off the flame and drain the hot water using a colander or strainer. Immediately wash noodles with cold/normal water to remove white starch and stop the heating process further.  Then drain the cold water also. Pour 1/2 teaspoon oil and toss the noodles to make them non-sticky. Keep the boiled noodles aside.
  3. Now place a wok or kadai on med flame and heat 3 tablespoons of oil, add chopped garlic and saute for a minute(do not let it turn brown.) Now keep the flame high till end. Now add onions and saute for 1-2 minutes.
  4. Add vegitable mixuture and 3/4th spring onions and saute properly. Keep stirring and tossing on high flame else vegetables might get burnt.
  5. Once the vegetables are 50-60% cooked (in approximately 3-4 minutes) add soya sauce and saute.Then add salt, pepper powder and saute well for a minute.
  6. Finally add the boiled noodles and stir properly. Saute for 2 minutes and toss well(if using a wok).The noodles should get properly mixed with veggitables and a uniform color is seen. Switch of the flame. Delicious Veg Noodles are ready , garnish it with remaining spring onions and serve Hot.

Tips:

  1. Entire cooking process should be happening on high flame , and continuos stirring and tossing gives better results
  2. Avoid aginomoto as its not considered good for health.
