This is a very quick and simple recipe and at the same time one of the most popular and typical rice recipes of southern india.
Ingredients:
- 1 cup raw or boiled rice
- 1 cup toor daal or arhar lentils (soaked 3-4 hours in luke warm water)
- 2 tsp sambar powder
- 1/4 tsp turmeric powder
- 1/2 tsp. coriander powder
- 1/2 tsp chilly powder
- salt to taste
- 1 tsp tamarind paste or 3 tsp tomato paste as alternative
- ghee for frying
- 1/2 tsp mustard seeds
- a few curry leaves
- a pinch of asafoetida
- 2 cashews (optional)
- few chopped shallots or mini onions(also called sambar onions)
- a few chopped corriander leaves
Method:
- Take a pressure cooker.
- Wash rice and daal properly rinsing 2-3 times with water and put rice and daal in pressure cooker
- Add turmeric powder, corriander powder, chilly powder, sambar powder and salt to the cooker
- Add 4 cups of water and tamrind or tomato paste mix into cooker.
- Cook in pressure cooker for 10 to 12 minutes on low medium flame for 2 whistles
- Add ghee in the pan and fry the shallots (sambar onions) till it gets brown and then add the mustard seeds, cashewnuts, curry leaves.
- Add this seasoning to the Sambar Rice. If the pan is large you can pur entire rice into the pan and mix.
- Sprinkle with chopped Corriander Leaves.
- Serve hot.
