Tamarind Rice is a popular rice recipe of the south India. Rice cooked with the Tamarind (imli) gives out this tangy recipe.
Ingredients:
- 2 cups basmati or long grain rice
- 5-6 dry tamarinds
- salt to taste
- 1/2 tsp turmeric powder
- 1/2 tsp jaggery powder
- 1 tsp fenugreek
- a pinch of asafoetida
- 1 tsp black mustard seeds
- 1 tsp channa dhal
- 5 red chilly
- 4-5 tbsp sesame oil(as needed)
- a bunch of curry leaves
- 4-5 peanuts
Tamaring Juice preparation:
- Soak the tamarinds overnight in 1/2 cup water.
- Mash the tamarinds with hands into water
- Using a strainer strain out the seeds and solid particles.
- Remaining liquid is our tamarind juice
Method:
- Cook the rice and spread on a plate. Keep the rice aside.
- Heat the non-stick skillet /tawa , add fenugreek and asafoetida and stir for a minute on medium flame. Don't add oil.
- Grind roasted fenugreek and asafoetida into a fine powder. Keep it aside.
- To the tamarind juice add salt, turmeric powder, jaggery, ground powder of fenugreek and asafoetida.
- Fry mustard, red chillies, channa dhal, peanuts and curry leaves in sesame oil.
- Pour into the tamarind juice mixture.
- Boil tamarind juice till it becomes thick and oil starts coming out with good aroma.
- Add cooked tamarind gravy to the rice.
- Pour in 1 tsp. of oil, if needed. Mix well and serve.
