Sewai | Semiya Payasam | Sewai ki Kheer | Vermicelli Milk Sweet pudding


Sewai or Vermicelli or Semiya Payasam is one of the most popular sweet dish across globe.
It is widely popular in many Asian Countries including India.

Cooking Time: 15 Mins
Serves : 4

Ingredients:


  • 200 gm Sewai or Vermicelli  , raw or roasted.
  • 1 Lt Full cream milk 
  • 10-12 pieces Raisins 
  • 8 pieces Cashews splitted into half
  • 5 pieces Almonds cut into 2-3 pieces each length wise
  • 100 gm Sugar
  • 2 tbsp Ghee(if Vermicelli is not roasted)

Method:

For Unroasted Vermicelli:

  1. Boil milk in a vessel and keep aside.
  2. If Sewai or Vermicelli is not roasted , then take a Kadhai and heat ghee in it.
  3. Then put vermicelli in the kadhai and roast it in ghee till it turns golden brown.
  4. Put all the milk in the kadhai with sewai and put the flame on low.
  5. Keep stirring regularly on low flame for 5-6 minutes.
  6. Put raisins , 5 cashews, 3 Almonds(crushed) and mix.
  7. Cook and stir for another 2-3 minutes. You can observe milk settling down and the layer of sewai and vermicelli getting thicker and yummier :)
  8. Add sugar , mix everything well and switch off the flame.
  9. Garnish with remaing cashews and almonds. You can use Pistachios as well for garnishing.

For Roasted Vermicelli:


  1. Boil milk in a wok or pan or kadhai
  2. Bring the flame to low and put sewai or vermicelle in it.
  3. Keep stirring regularly on low flame for 5-6 minutes. 
  4. Put raisins , 5 cashews, 3 Almonds(crushed) and mix.
  5. Cook and stir for another 2-3 minutes. You can observe milk settling down and the layer of sewai and vermicelli getting thicker and yummier :)
  6. Add sugar , mix everything well and switch off the flame.
  7. Garnish with remaing cashews and almonds. You can use Pistachios as well for garnishing.

Note : 

  • There are 2 varieties of sewai , one is relatively thinner and one is thicker.
  • The one shown here is for thicker one. Thinner one will need few minutes less for cooking.
  • You can easily identify roasted vermicelly, it will be brownish in color.
  • Unroasted will be white in color.
  • The sewai shown in image was for 2 person , but the recipe has been scaled for 4 person
