Jalebi is the national sweet of India. It is a mouth watering treat for all age groups.
Serves : 4 People
Ingredients:
- 200 g refined flour(Maida)
- 1 tablespoon Bengal Gram flour(Besan)
- 1 tsp dry active yeast
- ½ tsp sugar
- Oil or ghee for frying
For syrup
- 400 grams sugar
- 1 cup water
- Few saffron threads
Method
- Mix sugar ,dry active yeast and 2 tablespoons mild hot water. Leave it for 5-10 minutes.
- Sieve refined and bengal gram flour in a large bowl. Add water and rinse the mixute well with neat hands to form a thick batter.
- Now put yeast mixture and mix well and keep the mixture in a warm place for 6 to 8 hours.
- After 8 hours the mixture ferments and gets puffed up and it is ready to make jalebi.
- To make sweet syrup mix sugar and water and boil on the gas till complete sugar dissolves.
- When the sugar melts completely then cook for further 5 -6 minutes.Add Saffron threads and to the sugar syrup,mix and set aside.Put off the stove/gas.
- Now heat ghee or oil in a flat wide pan.
- Put jalebi mixture into plastic packet and make a small hole in the corner.
- By pressing plastic packets from the top , pour in the jalebi mix into the hot oil in shape of Jalebis of 3-4 inches in diameter.
- Cook jalebis on medium heat until it turn golden. Take the galebis out of oil and pour into sugar syrup for 3-4 minutes.
- You will need to fry jalebis in batches and repeat the same process of putting in sugar syrup
- Serve hot galebis along with rabri(another traditional Indian sweet dish)
Note : We can also use muslin clothe and make a hole in bottom instead of plastic packets.
