Ingredients:
- 2 medium potato/aloo, chopped into fine cubes
- 1 tomato finely chopped
- 2 medium onion, finely chopped
- 1/2 Green capsicum finely chopped
- 1 green chili, finely chopped
- some sprig curry leaves/kadi patta
- 1 tsp turmeric powder/haldi
- salt as required
- 2 tbsp oil
- 2 cups poha,(flattened rice/parched rice- preferably thicker variety)
- 1 tsp black mustard seeds/rai
- 1 small cup peanuts/moongphali
Method:
- Heat oil in a wok/kadhai and add black mustard seeds , green chilly and curry leaves.Allow seeds to splutter.
- Add onions and mix well. Fry for 3-4 minutes over medium heat.
- While onions are cooking up heat oil in a pan and roast peanuts in it. Once done keep aside in a bowl.
- Add chopped onions and capsicum to the wok.
- Mix everything well. Saute potatoes. Cover the lid and let it cook for 2 minutes.
- Remove the lid and add tomatoes. Mix well and cook for another 2 minutes.
- In a bowl wash the poha and let it remain water dipped for 1 minute and then drain off the water. Remember you should not let the water remain longer else poha/chuda will break and become lumpy.
- Now add roasted peanuts to the wok/kadhai. Mix well.
- Now add poha / flattened rice to it and mix well. Cook for another 2 minutes.
- Serve hot poha. You can sprinkle some lemon juice just before serving.
