Fruit & Nut Bars | Fruit & Nut Snack Bars


Ingredients:


  • 1 cup chopped nuts (a mix of walnuts, pecans and pistachios.) 
  • 1 cup pumpkin seeds
  • 1/2 cup raisins
  • 1/4 cup apricots. chopped
  • 1/4 cup dates. chopped 
  • 2 cups brown rice flour 
  • 8 tbsp. honey  
  • 4 tbsp. oil  
  • 1 large egg 
  • 1 tsp salt 
  • 1 tsp powdered cinnamon  
  • 1 teaspoon vanilla extract 
  • 1/3 cup of mango juice(or choose fruit juice as per your choice)

Method:


  1. Preheat  oven  to 325°F.  Chop  the  nuts,  fruit  and  seeds  then  mix  together  in  a bowl.  
  2. In  a  separate  bowl,  blend  flour  and  cinnamon  then  stir  in  the honey, oil, egg and vanilla.  Pour this wet mixture over the nuts, fruit and seed mixture. Stir with wooden spoon.  
  3. Slowly add juice to make a stiff batter. 
  4. Spread mixture into a lightly greased baking dish.  Bake for 35 minutes or until edges start to brown and middle is dry.  
  5. Take the tray out and let it cool.Cut into squares.
