Ingredients:
- 1 cup chopped nuts (a mix of walnuts, pecans and pistachios.)
- 1 cup pumpkin seeds
- 1/2 cup raisins
- 1/4 cup apricots. chopped
- 1/4 cup dates. chopped
- 2 cups brown rice flour
- 8 tbsp. honey
- 4 tbsp. oil
- 1 large egg
- 1 tsp salt
- 1 tsp powdered cinnamon
- 1 teaspoon vanilla extract
- 1/3 cup of mango juice(or choose fruit juice as per your choice)
Method:
- Preheat oven to 325°F. Chop the nuts, fruit and seeds then mix together in a bowl.
- In a separate bowl, blend flour and cinnamon then stir in the honey, oil, egg and vanilla. Pour this wet mixture over the nuts, fruit and seed mixture. Stir with wooden spoon.
- Slowly add juice to make a stiff batter.
- Spread mixture into a lightly greased baking dish. Bake for 35 minutes or until edges start to brown and middle is dry.
- Take the tray out and let it cool.Cut into squares.
