Blueberry Tart


Ingredients:

To make crust:
  • 1 cup walnuts
  • 1 cup cashews
  • 1/2 cup dates
  • 1/2 cup raisins
  • 1/2 teaspoon himalayan salt
For the filling:
  • 3 cups organic blueberries
  • 4 tablespoons honey/agave/maple syrup
  • 1/8 teaspoon cinnamon
  • 1 cup coconut cream

Method:

Preparing  the crust
  1. Process the walnuts and cashews into a rough wet flour in your food processor, 
  2. Add the dates, raisins and salt. process until it all sticks together. 
  3. Press the crust into lined cupcake tins and put in the fridge.Fridge till its sets properly and turn harder.
To make the filling
  1. Mix the honey ,coconot cream and cinnamon gently into the blueberries. 
  2. Then fill the tarts with the blueberries mix and enjoy.
