Ingredients:
- 3 potatoes cut into small dice,
- 2 onions chopped fine
- 1/2 cup chopped carrots
- 1 cup dried or white beans
- some chopped celery
- 1/2 cup rice,
- 3 tbsp. of butter,
- 3 tbsp. of grated Parmesan cheese,
- pepper and salt to taste.
Method:
- Soak the dried beans in cold water overnight or for at least six hours.
- Heat 1 tbsp. of butter in a deep pan and gently fry onions and carrots for few minutes.
- Add 1 litre of water and boil the vegetables until quite tender
- Then add the rice, also pepper and salt, and cook all together on low and aloow to simmer gently until the rice is soft, adding more water if necessary.
- Before serving add the butter and cheese, stir a few minutes, and serve.
