MINESTRA | Corsican Minestra Soup


Ingredients:


  • 3 potatoes cut into small dice, 
  • 2 onions chopped fine
  • 1/2 cup chopped carrots
  • 1 cup dried or white  beans
  • some chopped celery
  • 1/2 cup rice, 
  • 3 tbsp. of butter, 
  • 3 tbsp. of grated Parmesan cheese, 
  • pepper and salt to taste. 


Method:


  1. Soak the dried beans in cold water overnight or for at least six hours.
  2. Heat 1 tbsp. of butter in a deep pan and gently fry onions and carrots for few minutes.
  3. Add 1 litre of water and boil the vegetables  until quite tender
  4. Then add the rice, also pepper and salt, and cook all together on low and aloow to simmer gently until the rice is soft, adding more water if necessary.
  5. Before serving add the butter and cheese, stir a few minutes, and serve.
