Ingredients:
- 1/2 cup mushrooms cut into halfs
- 1/2 cup boiled-mashed potatoes
- 1 cup breadcrumbs
- 1 small onion chopped
- 2 eggs
- 4 tbsp. of butter
- a little milk
- some finely chopped parsley
- 1/2 tsp herbs
Method:
- Heat 1 tbsp. butter in a pan and fry together mushroom and onions.
- Add mashed potatoes, and parsley to the pan and mix well together.
- Now add the breadcrumbs, 1 egg well beaten, add also pepper and salt to taste; if necessary add a little milk to mix everything well into a thick paste;
- Shape the mixture into cutlets,
- Dip them in the other egg well beaten,
- Fry them in the rest of the butter. Serve with tomato sauce.
