Mushroom Butter Masala | Mushroom Makhani Recipe


Mushroom Butter Masala is a rich gravy in which musroom is cooked in butter. By rich we can refer to both taste and calories :) . This is bit tough to make and involves multiple ingredients and steps, but Its sure once you try it and make it into your platter. You are going to realize after tasting it that all the effort was worthy. It goes great with Naan or Roti.

Ingredients:

  • 200 grams Button Mushrooms cut into pieces.
  • 3 Medium Onions sliced
  • 2 Tomatoes chopped
  • ½ Cup fresh cream
  • 3 tbsp. Butter.
  • ½ tsp crushed cardamom seeds.
  • 2  tbsp. crushed ginger & garlic
  • 10 cashews soaked in ½ cup milk
  • 1 tbsp. Kasuri Methi (Dried Fenugreek leaves.
  • Salt as per taste
  • 1 Bay leaf
  • 4 cloves
  • Two 1” pieces cinnamon
  • 2 Dry Red Chilly
  • 1 tsp Garam masala
  • 1 tsp Kashmiri red chilly powder
  • 1 tsp Turmeric

Method:

  1. Soak cashews in milk for 20 minutes and then grind together.
  2. Heat 1 tbsp. butter or ghee in a kadhai and fry onions for 2-3 mins over medium heat.
  3. Add chopped tomatoes and sauté together for another 2-3 minutes.
  4. Put the contents of kadhai into blender and blend to smooth paste.
  5. Heat another 2 tbsp. butter in the Kadhai and put cloves, cinamon, crushed cardamom seeds, bay leaves & red chilly.
  6. Add mushroom to the kadhai. Keep stirring for 2-3 minutes. Mushroom contains lot of water which will be released slowly.
  7. Now add ginger and garlic paste and mix well. Cook for 2-3 minutes.
  8. Add turmeric and salt and mix.  Stir for 2 minutes. 
  9. Add red chilly powder & mix. Stir for another two minutes. 
  10. Add cashew & milk paste and sauté for a minute.
  11. Add onion tomato paste, 1 cup of water and mix. Cook for 2 minutes in medium flame.
  12. Put kasuri methi (dry fenugreek leaves) and mix.
  13. Put Garam masala and mix.
  14. Finally add cream and mix thoroughly. Switch off heat in a minute.
