Dry Aloo Gobi Recipe | Punjabi Aloo gobi recipe

This punjabi style Aloo Gobi Recipe is dry. It is one of the most loved combination of vegitarions across world. This is very simple to cook.

Serves: 4

Ingredients:

  • 4-5 medium size potatoes/aloo , cut into small pieces 
  • 1 medium sized cauliflower/gobi , florets removed and washed
  • 1 Tablespoon Ginger Garlic paste
  • ½ tsp turmeric powder/haldi
  • 1 tsp kashmiri red chili powder or deghi mirch powder
  • ½ tsp garam masala powder
  • 3-4 Tablespoon oil or ghee
  • chopped coriander leaves/dhania patta for garnish 
  • salt as required

INSTRUCTIONS

  1. Take one medium sized cauliflower and chop it into medium florets. Wash and rinse the cauliflower florets properly in water. Now cauliflower is prone to find small tiny insects inside it. So choose fresh cauliflowers only. Also boiling treatment is must for cauliflowers. Boil the florets in water for 14-15 minutes and keep the lid closed during boiling. Now drain the water and rinse one with cold water properly. This process will ensure proper cleaning of cauliflower florets.
  2. Peel and cut the potatoes. 
  3. In a thick base wok/kadai, heat oil or ghee.
  4. Add the aloo/potato pieces and start cooking in lower flame.Stir the potatoes well and saute them for 6 to 7 minutes. 
  5. Now add the gobi/cauliflower florets and saute for 4-5 minutes. continue to stir in between.
  6. Add ginger-garlic paste. stir again very well.
  7. Put turmeric powder, red chili powder and salt. Stir again very well, so that the spices are mixed uniformly.
  8. Cover the pan with its lid tightly.
  9. Simmer the aloo gobi 15 to 20 minutes on a low flame. 
  10. Intermittently remove lid and keep checking the tenderness of Aloo and cauliflower and stir them.Since cauliflower was blances it will be tender automatically. Aloo needs to be checked.
  11. Once the potatoes and cauliflower have became tender and got cooked, sprinkle garam masala powder and mix it with the entire sabzi
  12. Garnish it with chopped coriander leaves.
  13. Aloo Gobi vegetable can be served with Roti or Parathas.
