Corn and pea fritters

Preparation time: 5 minutes
Cooking time: 5 Minutes
Serves: 3  (Makes 6 Fritters )

Ingredient:


  • 1 cup corn flakes
  • 6 whole eggs
  • 100 gr green blanched peas
  • 50 gr blanched baby corn sliced
  • A medium bunch of chives finely sliced
  • 2 tbsp brown sugar
  • Olive oil for shallow frying


Method:


  1. Whisk the eggs along with sugar.
  2. Add chives, peas, cornflakes and baby corn.
  3. Mix everything and let it rest for 20 minutes.
  4. Put some olive oil over frying pan and heat it. 
  5. Take half a ladle or approx 2 tbsp of the mixture and pour it over frying pan.
  6. Cook slowly over medium heat untill it starts turning golden brown.
  7. Turn over and cook at another side as well
  8. When it looks throughly cooked and slightly firm , serve them hot.
