Cucumber Carrot Fritters

Cucumber & Carrot fritters

This is a very healthy recipe with the goodness of high fibre vegetables.

Ingredients 


  • 3 small cucumbers (about 300g)
  • 3 medium carrots, peeled (about 200g)
  • 4 green onions
  • 1 cup grated cheese
  • 2 eggs 
  • 1/2 cup refined flour
  • 1 tsp baking powder
  • salt as per taste
  • pinch of black pepper powder
  • vegetable oil for shallow frying

Method:


  1. Peel and grate cucumber and carrots coarsely. Squeeze grated cucumber to remove excess water. Put both vegetables in a bowl and mix
  2. Finely chop green onions  and add them to the vegetables
  3. Add cheese , flour , baking powder , salt and pepper to the mixture
  4. Break eggs in a separate bowl and beat/whisk them using a metal spoon
  5. Puts eggs into the vegetables mixture, and stir everything to form a uniform mixture
  6. Heat oil in a frying pan over medium heat.Take 2 tbsp or half laddle mixture at a time and pour into the pan. Cook fritters on each sides till they turn golden brown and are thoroughly cooked,
  7. Drain on absorbant papers and serve hot
