Sattu Paratha Recipe | Fried Bengal Gram Flour Paratha


Sattu is a flour prepared from fried Bengal grams. Sattu Paratha is a famous North Indian Recipe which is prepared with a stuffing of Sattu inside Paratha.There are other variants to this recipe like Sattu ki Kachauri , Litti etc

Ingredients:

500 gms Whole wheat flour
300 gms Sattu flour
3 Tablespoon Ghee or Oil
3-4 Garlic cloves
1/2 inches ginger
1 chopped green chilly
1 medium sized onion chopped finely
1 tsp lemon juice
1 tbsp spices from mango pickle mixed with oil
1/2 tsp Ajwain seeds
Salt as per taste




Method:

  • Mix oil and salt to the wheat flour
  • Start adding little water at a time and knead the wheat to a soft non-sticky dough , just like         Roti 
  • Put onion, pickle masala , chilly , salt , ajwain seeds into sattu flour and mix well
  • Grate ginger and garlic and mix into the sattu flour
     
  • Add little water and mix everything with hands properly
     
  • From the wheat dough take handfull of dough and shape in form of balls
  • Take one such ball and apply little wheat flour for dusting 
  • Press the balls to small disc shape
  • Put the sattu mix in the centre of disc
  • Now keep the filled disc in hands and try to close it out to cover the Sattu filling inside


     

  • Now spread and roll using rolling pin in large circular Parathas

  • Heat out griddle/tawa and put the Paratha on top of it
  • After few seconds turn to another side , apply ghee and spread across
     
  • Turn again and apply and spread ghee on other side


  • Cook on both sides till it turns golden brown.

  • Serve hot with coriander chutney and tomato sauce
