ALMOND PUDDING

Ingredients:


  • 1 cup of almond paste.
  • 1/2 cup of butter.
  • 2 eggs.
  • 2 tbsp. sifted sugar.
  • 2 tbsp. cream.
  • Ratafia flavouring. 
  • Some pistachios chopped/crushed finely for garnishing(optional)

Method:


  1. With a spoonful of water make the ground almonds into a paste.
  2. Warm the butter, mix the almonds with this.
  3. Add the sugar , cream, flavouring and the eggs well beaten. Mix well.
  4. Butter some cups, half fill them, and bake the puddings for about 20 minutes. 
  5. Turn them out on a dish, garnish with ground pistachios and serve. Accompanients like sweet sauce can also be used.
