Mix Veg Recipe - North-Indian, Punjabi Style


This Mix Veg recipe is prepared by frying the vegetables and then cooked along with some cream
This turns out to be very tasty but its rich in calories. But most of the Punjabi recipes are rich in both taste and calories :)
The gravy is little sweet and creamy.

Preparation Time: 30 Minutes
Cooking time : 30 Minutes
Serves: 4

Ingredients:

Vegetables:
1 medium carrot/gajar, peeled and cut into cubes
1 large potato, peeled and cut into medium sized cubes
10-12 french beans, chopped
¼ of medium sized cauliflower cut into small pieces
50 gm of peas, fresh or frozen
1/2 of Medium sized green capsicum.
1/2 of medium sized yellow or red capsicum or you can mix 1/4th of both color
1 medium onion - chopped finely
2 large tomatoes - chopped finely
1 tablespoon ginger & garlic paste
2 green chilli chpped
10-12 whole cashews/kaju
½ tsp turmeric powder
½ tsp red chili powder
½ tsp garam masala powder
1 tsp coriander powder/dhania powder
A pinch of asafoedita/hing
50 gm paneer cubes cut into cubes
1 tbsp fresh yogurt/curd - beaten to become smooth
3 tbsp low fat cream / (Amul Cream can be used)
4 tbsp oil
1 tbsp chopped coriander leaves for garnish
salt and water as required
INSTRUCTIONS
  1. Wash all the vegetables properly and chop them into small to medium sized pieces.
  2. If you are using frozen peas , boil it for 2-3 minutes in hot water.
  3. heat oil in a wok/kadai or pan and add the chopped vegetables and start frying them.
  4. fry them till they are cooked properly and start turning golden brown, keep the vegetable out with a slotted spoon(ladle with holes) on absorbent paper napkins to absorb excess oil.
  5. In the same oil, add chopped green chilies and cashews. fry till the cashews are golden . remove with a slotted spoon and keep on absorbent paper napkins.
  6. Add asafoetida and stir, then add onions. and sauté till the onions turn  light brown
  7. Then add ginger-garlic paste and sauté for 2 minutes
  8. Then add finely chopped tomatoes, Stir and saute for 3 minutes on medium flame
  9. Add red chili powder, turmeric powder, coriander powder and garam masala powder and stir.
  10. Add whisked/beaten curd and stir briskly/fast. Use nice thick curd. as ingredient.
  11. Then add cream, stir well.
  12. Now add water(1/2 to 1 Cup) , put pinch of salt and stir.(Depending on how much gravy you need.
  13. When the gravy looks settle down/simmer then add the fried vegetables, paneer cubes, fried cashews and chilies.
  14. Stir and mix the veggies and allow them to simmer in the gravy for 2 minutes.
  15. Mouth-Watering mix veg is ready. It can be served along with Roti, Paratha or Naan.
