ARTICHOKE SOUP.


Ingredients:


  • 6 artichokes pieces
  • 3 medium potatoes
  • 1 Spanish onion
  • 1 tbsp. of butter
  • 1 cup of milk
  • a pinch pepper 
  • salt to taste. 

Method:


  1. Peel, wash, and cut the artichokes, potatoes, and onion into dice . 
  2. Heat 2 cups of water in a saucepan and cook the artichokes, potatoes, and onion.
  3. Add butter and seasoning to the water and mix.
  4. When the vegetables are tender rub them through a sieve. Mass them if required.
  5. Return the liquid to the saucepan, add the milk, and boil the soup again. 
  6. Add water if the soup is too thick. 
  7. Serve hot with rusks, or small dice butter fried bread. 


Tip: You can also Garnish with cream and chopped spring onions leaves.
